What's Cookin?:
Gingerbread Cookies (gluten/paleo)
Bake at 400 degrees for 12-15 minutes.
1 cup coconut flour
6 eggs
1/4 tsp salt
1/2 cup molasses
3/4 cup brown sugar
1 tsp ginger
1 tsp cinnamon
1/4 tsp ground cloves
Mix well. Drop spoon size amounts on cookie sheet, bake, and enjoy!

What's Cookin?:
Gingerbread Brownies
13 dates, pitted
¼ cup coconut oil, melted
3 eggs, whisked
3 tablespoons molasses
1 teaspoon vanilla extract
¼ cup unsweetened cocoa powder
2 tablespoons coconut flour
2 teaspoons powdered ginger
1 teaspoon cinnamon
¼ teaspoon ground cloves
¼ teaspoon baking soda
¼ teaspoon baking powder
pinch of salt
extra coconut oil, for greasing pan
Preheat oven to 375 degrees
Place 13 pitted dates in a food processor and pulse until the dates begin to bind and clump together
Add coconut oil, eggs, molasses, and vanilla extract to the food process and puree until smooth
Add cocoa powder, coconut flour, powder ginger, cinnamon, ground cloves, baking soda and baking powder along with a pinch of salt and puree until completely combined and smooth
Grease an 8×8 glass baking dish with extra coconut oil and then pour the brownie mixture into the baking dish and smooth out
Place in oven and bake for 20-25 minutes. Let cool for 10 minutes before cutting.
Cut brownies into 9-12 brownies then top with ice cream.

What's Cookin?: Peanut Butter Dog Treats: 1 1/2 c whole wheat flour, 1/4 c oats, 1tsp. baking powder, 3/4 c milk, 3/4 c melted peanut butter, 1 1/2 tsp. molasses. Mix all, then roll out and cut into shapes....bake 350 degrees for fifteen minutes!

What's Cookin?: Thanksgiving Dinner...Spiced Cranberry Sauce (1c water, 1c brown sugar, 1/4tsp. ground cloves, 12 oz. package cranberries, 8 oz. pineapple tidbits, 3/4 chopped pecans) Combine: water, brown sugar, cloves, & cranberries; bring to a boil and continuous stirring while they pop! @7-10 min. Remove from heat and add pineapple & pecans. Serve warm or cold.
